Thomas Duffy, Executive Chef is a culinary talent with reputable experience at some of the most upscale restaurants in the New England area. Duffy, who was previously the Sous chef at the Spiced Pear before being appointed as Executive Chef in March 2010, oversees all culinary operations of The Chanler at Cliff Walk.
Spiced Pear, with Duffy’s natural creativity and ability at the helm, serves the best of what New England’s farms have to offer. Each dish shares the simple pleasures of the season and the purest flavors that can only be achieved organically from local ingredients. Duffy strives to use the freshest seafood, free range and organic meats, as well as locally made artisan cheeses. Duffy also prides himself on his dish presentation saying, “People eat not only with their mouth, but their eyes too. The artistry in food display and how it is painted on fine china is extremely important.”
Prior to arriving at The Chanler, Duffy was the Executive Chef at Bay Leaves Restaurant in Warwick, Rhode Island. In addition, Duffy gained experience at other excellent restaurants in Rhode Island. He was the Executive Chef at Quattro Italian Grille in South Kingstown, Rhode Island and Sous Chef at Pot au Feu in Providence, Rhode Island. Before settling in Rhode Island, Thomas also gained experience at Doral Golf Resort & Spa in Miami, Florida and at the Scottsdale Princess in Arizona.
Thomas Duffy was born and raised in Rhode Island and currently resides in Newport.
Duffy's leadership team also includes Nicole Holden, Sous Chef (pictured right inset). Nicole has spent multiple seasons at The Chanler under the tutelage of Executive Chef Duffy. Nicole, a native of Rhode Island, who studied in Bristol, Rhode Island, proved herself in many local Bristol dining establishments, such as Hotpoint Restaurant and the award-winning Persimmon.
